New items are added to the ALMA menu. In the ALMA tasting menu, featuring dishes selected by Henrique Sá Pessoa, emphasis goes to Salted cod, egg, bread, salted cod and coriander broth, a type of codfish “açorda” (solid bread soup): “It’s my favourite and involved extensive experimental work!”, he remarks. Other desserts were also included, such as Basil Sorbet and the Blackberry textures and Celery. The chef’s renowned Suckling pig confit now appears in a completely new version, richer and irresistibly crispy. In the words of Henrique Sá Pessoa, “inspired by traditional flavours and now more refined”. The smoked butter, another crowning jewel at Alma, has been maintained, but now accompanies the mouth-watering Gleba bread. A sea of surprises that may also be savoured à la carte, for those who prefer to take control of the meal and design their own menu.
