A passion for wine times two
Alma’s two new Head Sommeliers are united in their passion for wine.
Pedro Ramos has always known that he would find personal happiness and professional fulfilment in the world of wine. Filipe Wang, on the other hand, discovered his passion quite by chance, during a visit to Bordeaux.
Pedro Ramos was born in Brazil, grew up in Lima and Bogotá and studied in the USA and Rio de Janeiro, where he took a degree in marketing, followed by an MBA in International Relations.
After moving to Lisbon to work and study, he certified as a WSET (Wine & Spirits Education Trust) Level 3 Sommelier. After two years in the restaurant business, he arrived at the Alma in 2017, as assistant to the then Head Sommelier, Gonçalo Patraquim and as part of the team that was perfecting the wine list and crafting the menu wine pairings. Two years and two stars later, he took over as Head Sommelier at the Alma: “I have the privilege of being able to work with the best Portuguese wines and with over 200 labels that I know inside out. 90% of our wine list is Portuguese, as what we really want to do is present the very best that our country has to offer. We are always looking for the best wines to match our menus, whether these are ‘outside the box’ selections or more traditional and iconic choices”, he concludes.
Working alongside Pedro is Filipe Wang, of Chinese parentage, born 27 years ago in Porto, where his parents owned a restaurant. Filipe has been in the food business his whole life.
He began his career in London, where he worked as a waiter at Dinner By Heston Blumenthal. In September 2017, he moved to the Launceston Place restaurant, in London, where he had the chance to work with Piotr Pietras, Master Sommelier and the second-best ASI 2017 Sommelier of Europe, and stayed until March 2019.
He returned to Portugal to take the Court of Master Sommelier’s Advanced Sommelier Certificate. He is the third Portuguese to have obtained this certificate and currently the only one that is based in Portugal.
Since June 2019, he has been one of the Head Sommeliers at Alma, where he works alongside Pedro Ramos: “He is a fantastic colleague. We make a great team and are totally on the same wavelength”, he says. For Filipe Wang, Alma is a gastronomic landmark with a more modern and laid-back service style. Although the wine list is relatively short and focused on Portuguese wines, it has a balance that is the envy of many other establishments. “We cover all the wine-producing regions in the country and stock something for every taste. We want to please all our diners and we understand that wine is something truly ‘personal’”, he adds.
